Our practical, hands-on workshop to developing your Hazard Analysis Critical Control Point (HACCP) program takes you step-by-step through the development, implementation, and verification process. You’ll be able to comply with regulated, internal, and customer food safety requirements with a well-managed food safety program.


AIB International’s HACCP Workshop is based on the 12 steps of Codex and is easy to understand and relate to your own food packaging manufacturing facility. This workshop is perfect for managers, supervisors, and employees in the food packaging manufacturing industry. Personnel from other departments, such as quality, research and development, and sales will also benefit.

This workshop is accredited by the International HACCP Alliance.

After this workshop you’ll know how to:

  • Identify key prerequisite programs and determine associated documentation requirements and verification and validation activities
  • Apply the Seven Principles of Codex
  • Determine critical control points and deviations and select appropriate documentation requirements
  • Compile necessary components of a HACCP manual

Upon successful completion of this workshop you will receive 1.2 continuing education units.

An explanation of food packaging safety hazards with an understanding of the difference between inherent hazards and those due to negligence. Exploration of appropriate control measures for various hazards

A review of key prerequisite programs and their role in HACCP

HACCP Workshop
A step-by-step workshop following the 12 steps of Codex; Seminar participants will work in teams to develop a model HACCP Plan with the guidance of AIB Staff.
