The FDA’s Food Safety Modernization Act (FSMA) requires that food facilities prepare and implement a food defense plan to prevent acts of intentional adulteration. This course addresses those FSMA requirements and Global Food Safety Initiative (GFSI) certification standards. Be challenged on how you would handle intentional adulteration risks and learn to design a comprehensive food defense plan. Through proactive preparedness and training, you can avoid intentional adulteration in your operation and supply chain.

After this training, you will be prepared to:

  • Develop a vulnerability assessment
  • Choose potential mitigation strategies that address identified actionable process steps
  • Establish a multidisciplinary food defense team to build your food defense plan
  • Establish food defense monitoring, corrective actions, and verification activities for identified mitigation strategies
  • Develop employee food defense training sessions that focus on FDA and GFSI expectations
  • Establish records that focus on FDA and GFSI requirements

Evaluation

Upon successful completion of this course, you will receive 1.3 continuing education units and a printable certificate of completion.

Food Defense Coordinator Certification

Becoming an AIB International Certified Food Defense Coordinator requires an additional exam. Following your successful completion of the Food Defense Coordinator Seminar, you will be sent the online certification exam, which you will need to complete within 30 days. In order to receive your Food Defense Coordinator Certification, you must achieve 80 percent or higher on the certification exam.
