What sometimes causes a soapy taste in fried tortillas?

Why is it necessary to wash the corn after treatment with lime and before
grinding?
The purpose of the lime treatment is to loosen the pericarp, or outer coating, so that it may be removed by the washing process. Also, without washing, the grinding is affected adversely.
What is the minimum amount of lime for treating of tortillas?
The minimum amount of lime used is about 10 ounces lime per 100 pounds of corn. A lesser amount will not cause a release of the pericarp, which is later removed in the washing process. If the pericarp is left in the process, the finished tortilla will be tacky and tough. The corn or masa used for corn chips should be washed more thoroughly than for tortillas.
