HACCP At-A-Glance
- Developed by NASA and Pillsbury Corp. to ensure food safety for the first manned space
missions. The Codex Alimentarius Commission that implements the Joint Food and Agriculture
Organisation (FAO) of the United Nations and World Health Organisation (WHO) Food Standards
Programme developed the guidelines for the application off HACCP

HACCP is a systematic method to ensure that you have done everything possible
to protect your products and processes.
HACCP Accreditation by AIB International is the best way to ensure that your HACCP Plan is
appropriate and scientific. If you haven’t implemented a HACCP Plan, AIB will provide training
and assist you in developing your plan.
There are four steps to AIB HACCP Accreditation:
- Your firm must achieve an 800 score on an AIB Sanitation/GMP Audit, with no section below 160.
- We will examine your HACCP manual and scientifically review the Critical Control Points (CCPs) and
Critical Limits (CLs) in your HACCP Plan. We will identify any discrepancies or non-conformities
(major or minor) in any of these areas.
- We will conduct an on-site audit of your plant, based on the seven HACCP principles and the
required prerequisite programs: standard sanitation operating procedures; a GMP program; pest
control program, chemical control program; customer complaint program; recall program;
traceability program; allergen control program. This audit covers actual implementation of the
HACCP plan, employee training, data collection and record-keeping.
- Following a successful on-site audit, you will receive a "Certificate of HACCP Accreditation,"
valid for up to three years, providing that follow-up audits verify that HACCP records are being
properly maintained, Prerequisite Programs remain in place, and AIB Audit scores do not fall below
800, again with no section below 160.
